Red Gurnard (Robin Fish) on Toast

Gurnard is also called Robin Fish, as the large fins can allow them to guide in the water.

Time for a funny looking fish: my first red gurnard recipe! This cutie was granted the ’Fish of the Year’ label here in Belgium in 2012. Before that it was the megrim’s turn. This great label puts lesser known or even forgotten fish species on a pedestal. Maybe to draw the attention away from certain popular fish that are dangerously close to being extinguished?

Anyway, red gurnard is incredibly tasty. Fish on toast as you can see! The bread takes care of the necessary crunch. I’m very fond of my homemade tomato vinaigrette as well. A generous drizzle is all this dish needs to freshen things up.
